Havana Club is a brand of rum that is manufactured in Santa Cruz del Norte, Cuba. The brand was established in 1878 by Joseph Arechabalas, born in Gordexola, (Biscay, Basque Country) and was nationalized in 1959 after the Cuban Revolution. Since 1993 is produced by Havana Club International consortium, which is a joint venture between Pernod Ricard and the Cuban government. Time is the crucial factor in the development process that respects Havana Club Cuban tradition maximum. After distillation, the spirits, which are the essence of Havana Club rum, phases undergo aging, blending and selection for the "mother" or base of rum. Subsequently, this base is mixed with fresh sugar cane distilled to create "fresh rum," which then becomes to age and mix until the Master Ronero believes is perfect for a particular type of rum. The latter mixing phase is called the "touch". It is the finishing touch in the process. At different stages of aging, the choice of barrels is crucial because the wood provides color, aroma and complexity to the liquid. The Master Ronero choose old white oak barrels for rum barrels breathe and younger for its tannic. The rum is intrinsicallylinked to the life and personality of the Cubans.
